Raspberry and White Chocolate Muffins

Healthy eating is not about being strict and depriving yourself of the foods you love ❌ if you've got a sweet tooth (like us) these White Chocolate Muffins are SERIOUSLY GOOD 😍 so easy to make and a healthier alternative to other ready made or traditional cake recipes. 

Our first sweet treat recipe: 
Raspberry and White Choc Muffin 🍰

 

What you'll need:

1 sachet of quaker sugar goodness, super fruits (super tasty but plain will do if you can't get it!) 
  • 25g of coconut flour
  • 1tsp of baking powder
  • 1 tsp of vanilla essence
  • 2tbs of water
  • 2tbs of sweetener
  • 5 eggs (separated) 
  • 50g of raspberries (optional)
  • 8 fresh raspberries 
  • 8 white chocolate buttons 
  • Teeny weeny bit of icing sugar (for dusting) 
How to do it:
  1. Sift your coconut flour and baking powder in a bowl, mix in the quaker super fruits sachet & then add your vanilla essence, sweetener, egg yolks and water - mix well (nobody likes lumpy muffins) 
  2. In a separate bowl whisk your whites until stiff and add a spoonful at a time to the mixture, throw in the raspberries. Easy! 💁
  3. Your almost there..! spoon them into 8 muffin cases evenly and bake in a preheated oven at 180° for 25 minutes
  4. Whilst still warm add a small white chocolate button (or milk chocolate if that tickles your fancy) and finish with a raspberry on top!
